Taco inspired Zucchini Boats
Hey Guys! I hope you are all having an amazing week! Lots of you said that you loved the Zucchini boats. I put together the recipe so you guys could make it for yourselves!
Ingredients
- Zucchini(I would do one for each person you are serving)
- ground beef 1lb
- 1/2 onion (chopped)
- 1 can of black beans
- 1/2 cup of corn (can be frozen)
- 1/2 cup of tomatoes chopped
- 1 to 2 cups of shredded cheese
- salt
- pepper
Directions
- Preheat oven to 350 degrees. Cut Zucchinis in half. Then scoop out the inside. Put the inside of the zucchini in a bowl.
- Bake the empty zucchini until it is pretty soft around 10 minutes but could take a little longer.
- I would cut up the insides of zucchini a little and then cook it in a little pot for 5 to minutes until soft.
- In large pan cook the ground beef. after the ground beef is cooked through. If there is water drain it.
- Then add onions salt, pepper and garlic. Add the zucchini insides, black beans, cherry tomatoes and corn. Mix together.
- Then fill the zucchini boats with the mixture and top the boats off with cheese
- Bake for about 10 minutes, so cheese can melt.
